Baking Frenzy

Lately I have been having lots of fun in the kitchen and this coming week it looks like I'll be baking even more!


  • I made baked spaghetti the other night and even managed to get in some squash (cut up really tiny so the hubs wouldn't see it or taste it) so we could have some extra veggies thrown in! Success!

  • the Hubs and I attempted to make Rice Krispie Treats, but I put too much butter in with the marshmallows so it came out kinda soggy.

  • Next up was a bag of apples that were about to go bad - so I flipped through the handy dandy recipe book that I got at Shannon's bridesmaid dinner (love it!). I tried my hand at the apple bundt cake which just happened to be dairy free - Winner! I brought it to work and within 1 hr all that was left was a few crumbs!

  • Coming up in the next few days is a key lime pie for my dad-in-law, sugar cookies shaped like wooden shoes and tulips for a co-worker who's moving to the Netherlands, and the thing I'm most excited about..... homemade dog treats!!!!!!!!!!!!!! See, next Friday is "take your dog to work day", but unfortunately the university's policy is no dogs on campus so that has been called off. As a concilation prize, I'm making personalized dog treats for the dogs in our building who wanted to participate. :)

Do you want the recipe for the Apple Bundt Cake? Here it is:


2 cups chopped apples (you can leave the skin on). I used Gala apples
1 cup brown sugar
1 1/2 cup flour
1 tsp baking soda
1 egg
1/2 cup vegetable oil


Combine the apples and brown sugar in a bowl and let sit for at least 1 hr. Add it the egg and oil and mix well. Add the flour and soda and mix with a whisk or spoon - no mixer - until just mixed. Pour into a greased bundt pan and let cook at 300 degrees for 30 minutes or until golden brown. Once cool you can eat "as is" for more of a breakfast bread, or it would be good topped with a brown sugar or cinnamon glaze for a more dessert flavor. Either way, enjoy!!!

So I haven't even seen that recipe but now I've got to try it- I've got a bag of apples sitting on my counter needing to be used in some way. Thanks for sharing the idea! And I can't wait to hear about the homemade dog treats! Used to work next to 3 dog bakery and it smelled yummy! :)

Fyi...the Rice Krispy treats I was explicitly told, You can't mess up RKT they're so easy! (well we know differently now!) :)

Yes, Apple cake sounds good but I want to see how these dog treats turn out too. We get our puppy Sunday!!
